Ingredients (Serves 2)
400g fresh Pescaluna salmon, diced (approximately 200g per person)
2 cups cooked brown rice
½ cup cucumber, thinly sliced
¼ cup pickled sweet onion
4–6 radishes, thinly sliced
½ cup cooked edamame (soy beans)
For the marinade:
1 tbsp soy sauce
1 tsp sesame oil
1 tsp rice vinegar
1 tsp honey or maple syrup
To finish:
1 tsp black sesame seeds
1 tsp white sesame seeds
Optional:
Spicy mayo (2 tbsp mayonnaise mixed with sriracha to taste)
Garnish:
Spring onions or microgreens
How to Make Salmon Poke Bowls
1. Marinate the Salmon
In a bowl, mix together the soy sauce, sesame oil, rice vinegar, and honey.
Add the diced salmon and gently toss to coat.
Cover and refrigerate for 10–15 minutes to allow the flavours to develop.
2. Prepare the Bowls
Divide the cooked brown rice between two bowls as the base.
3. Assemble the Poke Bowl
Top the rice with the marinated salmon, cucumber, radish slices, pickled onion, and edamame.
4. Finish & Garnish
Sprinkle with black and white sesame seeds.
Drizzle with spicy mayo if desired and garnish with spring onions or microgreens.
Serve immediately while the salmon is fresh and chilled.
