Ingredients (Serves 2)

2 West Coast lobster tails (frozen, thawed)

3 tablespoons butter, melted

2 cloves garlic, finely minced

1 tablespoon lemon juice

1 teaspoon fresh parsley, chopped (plus extra for garnish)

Salt and freshly ground black pepper, to taste

How to Make Garlic Butter Grilled Lobster Tails
1. Prepare the Lobster Tails
Using kitchen scissors, cut through the top shell of each lobster tail lengthwise, stopping at the base of the tail.
Gently pull the meat up through the cut shell and lay it on top, keeping it attached at the base.
2. Make the Garlic Butter
In a small bowl, mix together the melted butter, garlic, lemon juice, chopped parsley, salt and black pepper.
3. Brush and Marinate
Brush the lobster meat generously with the garlic butter mixture.
Allow to marinate for 5–10 minutes while you preheat the grill or oven grill.
4. Grill or Oven Grill
Grill Method:
Preheat the grill to medium-high heat. Place the lobster tails meat-side up on the grill and cook for 5–6 minutes, until the meat is opaque and lightly charred at the edges.
Oven Grill Method:
Set the oven to grill at 220°C. Place the lobster tails on a baking tray and grill for 8–10 minutes, basting once halfway through.
5. Serve
Drizzle with the remaining garlic butter, sprinkle with extra parsley, and serve immediately with lemon wedges.
