Ingredients

  • 500g hake fillets, skinless and boneless (fresh or frozen, thawed)

  • 2 medium potatoes, peeled and cubed

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tablespoon fresh parsley, chopped (or coriander for extra zest)

  • 1 teaspoon Dijon mustard

  • 1 egg, lightly beaten

  • ½ cup breadcrumbs (plus extra for coating)

  • Zest of 1 lemon

  • Salt and black pepper, to taste

  • Oil, for shallow frying


How to Make Hake Fish Cakes

1. Cook the Hake and Potatoes

Boil the potatoes in salted water until tender. Drain well and mash until smooth.

Poach or steam the hake fillets for 6–8 minutes, until just cooked through. Flake into large chunks and allow to cool slightly.


2. Mix the Fish Cakes

In a large bowl, combine the mashed potatoes, flaked hake, onion, garlic, parsley, Dijon mustard, lemon zest, egg and breadcrumbs.

Season generously with salt and black pepper and mix gently to combine.


3. Shape

Form the mixture into patties, making approximately 8 medium fish cakes.

Lightly coat each fish cake in extra breadcrumbs.


4. Cook

Heat a little oil in a frying pan over medium heat.
Fry the fish cakes for 3–4 minutes per side, until golden and crisp on both sides and heated through.


5. Serve

Serve hot, straight from the pan.
