This Pan-Seared Kingklip with Garlic Butter Mash is rich, simple, and full of flavour — showcasing the delicate texture of kingklip paired with creamy potatoes and lemony butter. Ingredients (Serves 2)
For the fish:
2 x 200g Pescaluna kingklip fillets
Salt & freshly ground black pepper
2 tbsp olive oil
2 tbsp butter
Juice of ½ lemon
Fresh parsley, chopped
For the mash:
3–4 medium potatoes, peeled and cubed
2 tbsp butter
¼ cup milk or cream
1 garlic clove, minced
Salt, to taste
How to Make Pan-Seared Kingklip with Garlic Butter Mash
1. Make the Garlic Butter Mash
Boil potatoes in salted water until soft. Drain well.
Add butter, milk or cream, minced garlic, and salt. Mash until smooth and creamy. Keep warm.
2. Prepare the Kingklip
Pat kingklip fillets dry and season generously with salt and pepper.
3. Pan-Sear the Fish
Heat olive oil in a pan over medium-high heat.
Sear kingklip for 3–4 minutes per side, depending on thickness.
Add butter and lemon juice to the pan and baste the fish as the butter melts.
Sprinkle with chopped parsley and remove from heat.
